GARLIC GINGER VEGGIE STIR-FRY
Adapted from Cook Nourish Bliss
Just 30 minutes to this healthy and easy garlic ginger veggie stir-fry! It includes the most delicious homemade garlic ginger sauce.

Total Time: 45 Minutes
FOR THE SAUCE:
- ¼ cup soy sauce
- 1 tablespoon Sahara Foods White vinegar
- 1 tablespoon honey
- ¼ to ½ teaspoon red pepper flakes
- 3 teaspoons Sahara Foods crushed garlic
- 1 tablespoon Sahara Foods ground ginger
- 2 teaspoons cornstarch
FOR THE STIR-FRY:
- 2 tablespoons olive oil or coconut oil
- 1 large red onion, sliced
- 1 large red pepper, sliced
- 1 large courgette, halved lengthwise then sliced
- 2 ½ cups fresh green beans halved
- 1 ½ to 2 cups chickpeas
- ½ cup raw walnuts, chopped
- cooked brown rice or quinoa, for serving
for the sauce:
- In a small bowl, whisk together all the ingredients for the sauce. Set aside.
FOR THE STIR-FRY:
- Add the oil to a large skillet set over medium heat. When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften.
- Add in the pepper, courgette and green beans and cook for about 6 to 8 minutes, until tender to your liking.
- Add the chickpeas, the walnuts and sauce (give it a quick whisk first). Continue to cook for about 1 minute, stirring frequently, until the sauce has thickened
- Remove from the heat and serve with rice or quinoa!
