GARLIC GINGER VEGGIE STIR-FRY

Just 30 minutes to this healthy and easy garlic ginger veggie stir-fry! It includes the most delicious homemade garlic ginger sauce.

FOR THE SAUCE:

  • ¼ cup soy sauce
  • 1 tablespoon Sahara Foods White vinegar
  • 1 tablespoon honey
  • ¼ to ½ teaspoon red pepper flakes
  • 3 teaspoons Sahara Foods crushed garlic
  • 1 tablespoon Sahara Foods ground ginger
  • 2 teaspoons cornstarch

FOR THE STIR-FRY:

  • 2 tablespoons olive oil or coconut oil
  • 1 large red onion, sliced
  • 1 large red pepper, sliced
  • 1 large courgette, halved lengthwise then sliced
  • 2 ½ cups fresh green beans halved
  • 1 ½ to 2 cups chickpeas
  • ½ cup raw walnuts, chopped
  • cooked brown rice or quinoa, for serving

for the sauce:

  1. In a small bowl, whisk together all the ingredients for the sauce. Set aside.

 

FOR THE STIR-FRY:

  1. Add the oil to a large skillet set over medium heat. When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften.
  2. Add in the pepper, courgette and green beans and cook for about 6 to 8 minutes, until tender to your liking.
  3. Add the chickpeas, the walnuts and sauce (give it a quick whisk first). Continue to cook for about 1 minute, stirring frequently, until the sauce has thickened
  4. Remove from the heat and serve with rice or quinoa!
